    Heat oil in a large skillet

    Add onion and saute over low heat, stirring until golden

    Add bacon and saute 2 more minutes

  • 4

    Squeeze juice and seeds from tomatoes and chop

  • 5

    Add tomatoes to skillet and cook, stirring, over medium heat, until soft- ened and sauce is slightly thickened about another 15 minutes

    Add red pepper and salt to taste

  • 7

    Pass with grated Pecorino Romano cheese

  • 8

    Serves 4.

  • 1/2 cup chopped onion
  • 8 strips lightly smoked, lean bacon
  • 1 (28 ounce) can whole peeled tomatoes, drained
  • Pinch of crushed dried red pepper
  • salt to taste
  • freshly grated Pecorino Romano cheese
