    Put half and half in a large saucepan with half of Parmesan cheese

  • 2

    Add Gruyere cheese, goat's cheese and mozzarella cheese

  • 3

    Cook over low heat until cheeses are melted

  • 4

    Season with pepper to taste

    Add cooked and drained bucatini or maca- roni to cheese mixture

  • 6

    Stir well

  • 7

    Sprinkle with remaining Parmesan cheese, ham and chives, if desired

    Serves 4.

ingredients

  • 1-1/4 cups half and half
  • 1/2 cup grated Parmesan cheese (1-1/2 ounces)
  • 3 ounces Gruyere cheese, diced
  • 3 ounces soft goat's cheese
  • 3 ounces mozzarella cheese, diced
  • freshly ground black pepper to taste
  • chopped ham, optional
  • chopped chives, optional
