Tri-Color Sauce

    Melt 1/4 cup of the butter in a large skillet

    Add the peas and sweet peppers and saute for about 3 minutes

    Add the cream and bring to a slow boil

  • 4

    Cook until the sauce is reduced by about one-quar- ter

    Add the tomatoes and cook for 10 minutes

  • 6

    Place hot pasta in a heated serving bowl

    Add the remaining 1/4 cup butter and Parmesan cheese

    Toss to mix

    Pour the hot sauce over and toss again

  • 10

    Serve immediately

  • 1 large sweet yellow pepper, julienned
  • 1-1/2 cups medium or light cream
  • 1 pound fresh plum tomatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
