Zucchini, carrot and Parmesan Sauce

    Heat the oil over low heat in a medium skillet

    Stir in the carrot, zucchini, and garlic

    Saute, stirring, for 3 minutes

    Toss hot pasta with the sauce

  • 5

    Pass with freshly grated Parmesan cheese

    Serves 4.

  • 2 garlic cloves, crushed
  • 1-1/2 cups shredded carrot
  • 1-1/2 cups shredded trimmed zucchini
  • freshly grated Parmesan cheese
