STRAWBERRY SALSA

    Remove stems from strawberries and medium dice berries

    Place in a medium bowl and toss with sugar. Cover and refrigerate for at least 1 hour and up to 2 hours. Remove stems from chili and thinly slice across into rounds

    Finely dice the red onion and add with chili to the strawberries

  • 4

    Remove leaves from cilantro and mince the leaves

  • 5

    Add to the salsa along with raspberry vinegar and salt and pepper to taste

  • 6

    Toss well and serve within 2 hours.

  • 1 pint strawberries
  • 2 tablespoons sugar
  • 1 serrano chili
  • 1/2 red onion
  • 6 sprigs cilantro
  • 3 tablespoons raspberry vinegar
  • Salt and pepper to taste
