    Peel and cut mango away from the pits

  • 2

    Cut mangos into large dice and place in a large bowl

  • 3

    Dice red onion to make 3/4 cup

  • 4

    Remove cilantro leaves from stems and mince

  • 5

    Add onion and cilantro to mango. Cut stems off serrano chili and slice across into thin slices

  • 6

    Peel garlic and mince and add to mangos along with chili

  • 7

    Toss in black beans, lime juice, olive oil and sugar

  • 8

    Let stand at least 30 minutes or refrigerate up to 3 hours before serving.

ingredients

  • 2 large or 3 small ripe mangos
  • 1/2 red onion
  • 1 small bunch cilantro
  • 2 serrano chilies
  • 2 cloves garlic
  • 2 (15-ounce) cans black beans, rinsed and
  • drained
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
