    Cut top and bottom off red bell pepper and slice down one side to open

    Remove seeds and membranes and lay flat

  • 3

    Peel peaches and cut in half

    Remove the pit from each. Finely mince the basil to make 1/4 cup and finely mince the mint to make 2 tablespoons

    Toss with olive oil. Brush the red pepper and peaches with the herb oil and grill until browned and softened a bit

    Cut red pepper into fine dice and peaches into large dice and place in a medium bowl

    Add the remaining herb oil. Peel the garlic and finely mince

  • 8

    Add garlic to peaches along with lime juice and salt and pepper to taste

    If mixture is not sweet enough add some sugar to taste. Cover and refrigerate up to 2 hours before serving.

  • 1 large red bell pepper
  • 3 large fresh peaches
  • 1 small bunch fresh basil
  • 1/2 small bunch fresh mint
  • 1/3 cup olive oil
  • 3 cloves garlic
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • Pinch sugar (optional)
