    Remove leaves from cilantro stems and chop the leaves

    Cover and set aside

  • 3

    Peel and mince the shallot, garlic and ginger

  • 4

    Melt the butter in a medium saucepan and add the shallots, garlic and ginger

  • 5

    Saute for 1 to 2 minutes to soften. Peel tomatoes and cut in quarters lengthwise

  • 6

    Scoop out seeds and cut into medium dice

  • 7

    Add to the saucepan along with the cilantro, sugar, tomato paste, lemon juice and salt

  • 8

    Bring to a boil, lower heat and simmer until tomatoes are tender, about 15 minutes

  • 9

    Cool and use within 4 hours.

ingredients

  • 1 bunch cilantro
  • 1 small shallot
  • 2 cloves garlic
  • 1/2-inch piece fresh ginger
  • 3 tablespoons unsalted butter
  • 5 large plum tomatoes
  • 1/4 cup sugar
  • 4 teaspoons tomato paste
  • 4 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
