    Peel and mince garlic

  • 2

    Trim ends from green onion and finely chop

  • 3

    Remove leaves from cilantro stems and mince

  • 4

    Finely mince the chipotle chili to make 1 teaspoon

  • 5

    Place the mayonnaise in a small bowl and stir in the orange juice concentrate

  • 6

    Stir in the garlic, green onion, cilantro and chipotle chili

  • 7

    Season to taste with salt and pepper

  • 8

    Cover and refrigerate until just before serving.

  • 2 cloves garlic
  • 1 green onion
  • 3 sprigs cilantro
  • 1 canned chipotle chili in adobo sauce
  • 1 cup mayonnaise
  • 2 tablespoons frozen orange juice concentrate,
  • thawed
