    Wash and dry the parsley and thyme

    Finely mince both

  • 3

    Stir thyme into melted butter

  • 4

    Preheat oven to 400 degrees

    Using a 2 inch round biscuit cutter, cut 2 circles from each bread slice

  • 6

    Chop enough of the scraps of bread to make 1/2 cup

  • 7

    Brush bread rounds with thyme butter and arrange on a baking sheet

  • 8

    Bake for 8 minutes or until golden

  • 9

    Chop the shrimp and combine with the chopped bread, Swiss cheese and mayonnaise to make a paste

  • 10

    Spread shrimp on toast rounds and sprinkle with paprika

  • 11

    Broil briefly until bubbly

  • 12

    Sprinkle with parsley.

ingredients

  • 1 handful fresh parsley
  • 3 sprigs fresh thyme
  • 2 tablespoons melted butter
  • 10 thin slices white bread
  • 6 ounces cooked small shrimp
  • 1/2 cup shredded Swiss cheese
  • 1/3 cup mayonnaise
  • 1 teaspoon paprika
