    Chop enough chives to make 1/4 cup

    Cut a few more into 1-inch lengths for garnish

    Set aside

  • 4

    Chop the pistachios and set aside

  • 5

    Preheat oven to 400 degrees

  • 6

    Peel garlic and mince

  • 7

    Stir 6 cloves garlic into the olive oil and let stand for at least 15 minutes and up to 2 hours

    Slice the baguette diagonally into 24 slices, 1/2-inch thick

  • 9

    Brush with garlic oil and sprinkle with Parmesan

    Bake for 8 minutes or until golden brown

    Mash the goat cheese and butter together in a medium bowl

  • 12

    Stir in the remaining clove minced garlic, the minced chives and the chopped pistachios

    Transfer to a serving bowl

  • 14

    Cover and refrigerate several hours or overnight

  • 15

    Garnish with chives and serve with toasts for spreading.

  • 1/3 cup toasted salted pistachio nuts
  • 7 cloves garlic
  • 1/2 cup olive oil
  • 1 crusty baguette
  • 1/2 cup freshly grated Parmesan cheese
  • 11 ounces soft goat cheese
  • 1/2 cup unsalted butter, softened
