    Cut cabbage in half and remove the core

    Cut into thin fine shreds

  • 3

    Cut the red pepper into medium dice

  • 4

    Finely chop red onion to make 1/2 cup

  • 5

    Remove cilantro leaves and finely chop

  • 6

    Toss cabbage, pepper, red onion, cilantro and corn in a large bowl

  • 7

    In a medium bowl whisk together the mayonnaise, sour cream, salsa, vinegar and cumin

  • 8

    Season to taste with salt and pepper

  • 9

    Up to 2 hours before serving, toss the dressing with the slaw adding only enough dressing to coat well

  • 10

    Cover and chill until serving time.

  • 1 red bell pepper
  • 1/2 small red onion
  • 1 bunch cilantro
  • 1 cup frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1/3 cup medium salsa
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon ground cumin
