    For dressing, remove cilantro leaves from stems

    Peel garlic and cut in half

  • 3

    Mince chipotle and green onions

  • 4

    Place cilantro, garlic, chipotle, lime juice, mustard, sugar and salt in blender and puree

  • 5

    Whisk in oil and green onions

  • 6

    Coarsely chop romaine, cabbage, pepper and jicama

  • 7

    Toss together with corn and dressing

  • 8

    Top with cheese and chips and serve immediately.

ingredients

  • Dressing:
  • 1/2 bunch cilantro
  • 2 cloves garlic
  • 1 chipotle chili in adobo
  • 3 green onions
  • 1/4 cup fresh lime juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • Salad:
  • 1 small head romaine
  • 1/4 head green cabbage
  • 1 roasted red pepper
  • 1/4 medium jicama
  • 3/4 cup frozen corn, thawed
  • 1/2 cup crumbled feta cheese
  • 1 cup crushed blue corn tortilla chips
