GRILLED CHICKEN, BLACK BEAN AND CORN SALAD WITH SALSA
ingredients
- Dressing:
 - 1/4 cup fresh lemon juice
 - 1 tablespoon Dijon mustard
 - 1/2 cup olive oil
 - 2 tablespoons prepared medium salsa
 - Salad:
 - 4 boneless skinless chicken breast halves
 - 1 large head romaine lettuce
 - 2 medium carrots
 - 1/2 hot house cucumber
 - 2 (15-ounce) cans black beans,
 - rinsed and drained
 - 1 cup frozen corn, thawed
 - 1 avocado
 - 1 cup crushed blue corn tortilla chips

Whisk together dressing ingredients in a small bowl. Trim chicken and pound to an even 1/2-inch thickness

Pour 1/3 of the dressing over the chicken and let stand 30 minutes

Grill chicken 4 minutes per side

Cut on a diagonal into 1/2-inch thick slices. Cut lettuce across into 1-inch strips

Peel carrots and thinly slice

Thinly slice the cucumber

Arrange lettuce in a bowl and top with carrots, cucumber, beans, corn and medium diced avocado
