    Peel garlic and mince

  • 2

    Remove cilantro leaves from stems and mince

    Stir garlic and cilantro into yogurt

  • 4

    Stir in chipotle chilies, lime juice and salt. Remove skin from chicken thighs, wash and thoroughly dry chicken

    Place in a casserole dish

  • 6

    Pour yogurt mixture over the chicken, turning to coat each piece

    Cover and refrigerate for at least 8 hours and up to 24 hours

    Preheat oven to 375 degrees

  • 9

    Remove thighs from the marinade and arrange on a parchment lined baking sheet

  • 10

    Bake for 50 to 60 minutes or until cooked through.

  • 1 clove garlic
  • 4 sprigs cilantro
  • 8 chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons minced chipotle peppers in adobo
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
