HALIBUT IN ASIAN BLACK BEAN GINGER SAUCE
ingredients
- 1 green onion
- 4 sprigs fresh cilantro
- 2-inch piece fresh ginger
- 3 cloves garlic
- 6 ounces fresh shiitake mushrooms
- 4 tablespoons vegetable oil, divided use
- 3 tablespoons Asian sesame oil
- 3 tablespoons dry white wine
- 4 tablespoons soy sauce
- 1-1/2 tablespoons Asian black bean garlic sauce
- 1-1/2 tablespoons hoisin sauce
- 1-1/2 tablespoons brown sugar
- 1-1/2 cups chicken broth
- 1 teaspoon freshly ground pepper
- 6 (6-ounce) halibut fillets
- 2 tablespoons unsalted butter

- 
                                1Trim green onion and mince 
- 
                                2Remove cilantro leaves and mince 
- 
                                3Peel ginger and garlic and mince 
- 
                                4Wipe mushrooms clean with a damp paper towel, remove the stems and slice 
- 
                                5In a large skillet over medium heat, heat 2 tablespoons vegetable oil and sesame oil and add half the ginger and garlic and toss for 1 minute 
- 
                                6Add the wine, soy sauce, black bean sauce, hoisin sauce, brown sugar, broth and pepper and cook for 3 minutes.Heat remaining 2 tablespoons oil in a small skillet 
- 
                                7Add the remaining ginger and garlic and mushrooms; saute for 4 to 5 minutes or until softened and wilted 
- 
                                8Set aside 
- 
                                9Add the fish fillets to the sauce in the large skillet and turn to coat with the sauce 
- 
                                10Cover and simmer for 4 minutes 
- 
                                11Turn fillets over, cover and continue cooking for 3 to 4 minutes 
- 
                                12Remove fish with a slotted spoon to serving plates 
- 
                                13Stir in mushrooms and butter until butter dissolves 
- 
                                14Spoon sauce and mushrooms over fish and sprinkle with green onions and cilantro.
