    Soak the raw almonds in a bowl with spring water for at least 4 hours, or overnight

    Drain the water from the almonds and rinse them

  • 3

    Add the almonds to a food processor and pulse until nicely chopped

    Add the almonds to a large bowl

  • 5

    Chop the bunch of scallions, the bell pepper, the olives, apricots, and cilantro and add the large bowl with the almonds

    In a separate bowl juice 1 to 1 1/2 lemons, and add in olive oil, salt, freshly ground pepper, and cumin

  • 7

    Whisk together and pour over couscous mixture

  • 8

    Gently toss ingredients together

  • 9

    Cut ends off heart of romaine to form little boats and fill with couscous

  • 10

    Serve!

  • bunch scallions
  • bell pepper
  • black kalamata olive (small handful)
  • dried apricots (small handful)
  • cilantro (small handful)
  • 1 - 1 1/2 lemon juice
  • heart of romaine lettuce
