Baja Carrots

    Shave the carrots into a large bowl

  • 2

    Cut the onion into thin half moons and add to carrots

  • 3

    Using gloves, slice the jalapeño and add all but the stem into the bowl

  • 4

    Pour white vinegar over the mixture (enough to coat) and add sea salt, fresh ground pepper, and chopped cilantro

  • 5

    Allow to marinate before eating.
