    Brown salt pork in skillet and drain

    In 2-quart bean pot, combine remaining ingredients

    Top with salt pork

    Bake uncovered on grill of hickory-smoker with hood down, 1 hour or longer

    You can also cook in a bar- beque grill with moistened mesquite chips

    Serves 8.

QUICK SMOKED BEANS

ingredients

  • 4 ounces salt pork, cut in 1-inch cubes
  • 2 1 -pound cans (4 cups) pork and beans
  • 1/2 cup catsup
  • 1/4 cup brown sugar
  • 1 teaspoon dry mustard
